In sawfish, create a couple of functions in .sawfishrc:

(defun iconify-all-windows ()
   "Iconify all windows."
   (interactive)
   (map-windows iconify-window))

(defun iconify-workspace-windows ()
   "Iconify all windows on the current workspace."

Then 'sawfish-client -f restart' and the functions should be in and
you should be able to bind keymaps to them ok (via 'sawfish-gui',
'bindings' menu).
