You can export the Outlook contacts list to the following file formats

Comma separated text
Tab delimited text
dBase
Access
Excel
FoxPro

Evolution can read several of these. I did this once and it was very easy; 
I am not sure but I think I used either the Excel format or comma separated 
text.

I think outlook can export its address book as vcards, evolution can
import vcards.
