Maybe your whois client is out-of-date.

Some flavours of whois(1) are smart enough to connect to the correct whois
server for .org domains.

If not, then tell it the whois server to use, like:

  whois -h whois.opensrs.net NHC-CHURCH.ORG

Also try whois server at whois.publicinterestregistry.net and see what it
tells you.
