I am in the process of setting up a KVM host system with AMD Opteron processors, 6300 series and 64Gb.
  CentOS 6.4 x86_64 sees the full set of memory, so I don't think its the OS unless there is something different about your CUP itself.

I remember at one time needing to be sure you put the the memory sticks in the the right location on the MB, have you checked the the Docs there?
