i have had no issues installing Linux to any of the x86-64 Mac minis.
Ubuntu and Proxmox were my distros of choice for that. for any of the new
Apple silicon minis that's a bit more of challenge. There is an Apple
silicone-tailored fedora distro that may work for you.
